This week we spent time making some quick dilly beans with the student interns. The major take away recipe that we talked about was the 1:1:1 ratio for the brine; this is 1 cup water, 1 cup vinegar, 1 tbsp of salt. We encouraged them to get creative with the aromatics. We brought dill, mustard seeds, pepper corn, coriander, hot peppers, to fill their dilly bean jar with.

Here is a very simple recipe for some dilly beans!

Put 1 cup water, 1 cup vinegar, and 1 tbsp of salt in a pan and bring to a boil. While waiting for this brine to boil place 2 cloves of garlic, 1/2 teaspoon red pepper flakes, 1/2 teaspoon yellow mustard seeds, and 1/2 tsp of dill seeds in a clean quart sized mason jar. On top of these spices put 1 lb of green bean beans in. Once the brine has come to a boil, pour the hot brine over the beans covering all the beans. Screw on lid, and leave on counter to cool. Once cooled, place the jar in the fridge and let sit for 5 days.

We are very excited to ear our dilly beans on Tuesday.
