February Harvest of the Month: Cabbage

We had an excellent display of teamwork bringing together February’s Harvest of the Month snack this morning. This month’s special vegetable is Cabbage, and the people who made it all happen are so many! The Charlottesville City School Nutrition Department staff at both Central Kitchen and the elementary schools really shined in their creativity and willingness to step up to the plate with a last-minute recipe change. Kudos. Kitchen Managers put in extra time to prepare the cabbage deliciously with lemon and salt and had it all ready early for our wonderful volunteers who delivered the cabbage to each school. Thank you kitchen managers and volunteers! Our thanks also go to the CSG Garden Coordinators at each elementary school who helped distribute the snack to each class, teachers who helped serve the snack and, of course, our very important student tasters. Additionally, Buford Middle School 8th Grader Caroline McLellan did the beautiful watercolor illustration for this month. Thank you, Caroline! Thank you to rock, paper, scissors who handled the design work, letting Caroline’s illustration shine. Thanks also to the farmers who grew the cabbage, Local Food Hub for sourcing it to our schools, and the earthworms who helped make the soil it grew in. Check out the action photos below.
